Is anyone using a mini for anti-aircraft guns? I think this would add another facet to the visual appeal of the game. Anybody have any ideas or even pics?

I use "Axis & Allies" minis.
I haven't pics from my own (I will take it) but the minis are like those examples:

There are a lot of minis in this collection, tanks, infantry, aircraft,... but the most are really expensive. Look for the cheapest ones!!

I know Skytrex (who sell the Red Eagle planes) do some 1/144 scale AA guns, mounted on trucks I think, plus a really nice balloon and winch truck.
This picture shows the Skytrex AA Guns. It also shows their Observation Balloon.
I do not use minis for AA guns because I think the minis get in the way of your planes. Therefore the only thing 3D on our gaming table are things that fly: planes and soon balloons.
I want to try to keep things uniform on the playing surface: everything 3D is more apealling to me than a mix of 2D and 3D. AA models wouldn't seem any more inconvenient than colliding airplane bases.
We simply move the AA Gun vehicle an inch or so to one side when the airplane base would try to occupy the same place at the same time. One that particular movement phase is over, we place the gun back in it's original location. We've never had more than four AA guns and the one winching vehicle on the table during any one game. Much more than that and I think it would begin to impede on the playability and flow of the game.
I've tried with 3D scenery and with out just not sure which is better.
I do prefer the the 3D aspect. I've made some trenches and barbwire up, plus in the process of making some gun emplacements. But the planes do have some tricky times trying to balance on the scenery. I guess its going to have to be trial and error to see whats the best mix and less annoying.

You always can use a card token if the plane superposes the mini
you itself

Axis and Allies Minis on ebay will get you a cheap and quick easy AAA piece for 3D gaming. I agree, it will get in the way of the planes as you move them about the board. See if you know anyone that plays AAM. The arty pieces are usually commons so they might have a couple extra to give away to you.
